Made by Famillia Suarez in Cuenca, central Spain, these mojo sauces are the quintessential sauce from the Canary Isles. Traditionally enjoyed over papas arrugadas (or wrinkly potatoes) it also makes a great accompaniment to grilled meats, fish or fried cheese. The rojo is made with choricero peppers and purple garlic, Famillia Suarez's speciality. The sauce is intense without being too hot. The verde offers a nice herby punch.
